Keto coleslaw anyone? The first official day of summer is almost here! That means scorching heat here in Georgia, barbeques, pool parties, and fun. In my opinion, no keto barbeque is complete without, grilled chicken, hot dogs, hamburgers, and sweet coleslaw. So in honor of the official kick-off of summer 2019 on the 21st, here is my take on a sweet southern style keto coleslaw.
If you’re like me, you may prefer to just grab a pre-packaged bag of coleslaw from the grocery store and then dress it because it’s so quick and easy. However, feel free to shred or dice yours for the perfect blend of ingredients. My preference is for the diced variety but it can sometimes be hard to find so, shredded is fine. However, if you want diced but can only find shredded, that’s cool too! Here’s the solution! Take your shredded bag and give it a few pulses in the food processor and “VOILÀ!”, diced coleslaw ready to go! This recipe pairs really well with practically any grilled meat of your choice, but my favorite is grilled chicken.
First, combine mayo and heavy cream to start building that familiar creamy southern slaw base. Then we add the tang of apple cider vinegar and mustard powder, our seasoning, and sweeteners and there you have it, the keto version of a classic sweet southern coleslaw. Although “sweet” this keto coleslaw is completely sugar-free and sweetened only with stevia and Swerve. When first mixed it will seem a little extra sweet, but if you let it sit for at least a couple of hours and my favorite, overnight it mellows out a bit, but of course you can reduce the sweetness to your liking. Did I mention this is only 3 net carbs per serving!

- Diced Coleslaw Blend| 14 oz
- Mayo | 1/2 cup
- Apple Cider Vinegar | 2 tbsp
- Heavy Cream | 5 tbsp
- Black Pepper | 1/2 tsp
- Sea Salt | 1/2 tsp
- Liquid Stevia | 20 drops
- Swerve Confectioner | 2 tbsp
- Mustard Powder | 1/4 tsp
- 1. In a medium sized bowl mix mayo, heavy cream, mustard powder, apple cider vinegar, salt, pepper, stevia, and Swerve.
- 2. Add bag of pre-packaged coleslaw into the bowl with dressing.
- 3. Mix thoroughly. Allow to sit in fridge for 2 hours up to overnight for best flavor. (optional)
- 4. Enjoy!
