Garlic Beef and Cauliflower Rice ‘Caulirice’ Bowls

Garlic beef and cauliflower rice ‘caulirice’ bowls are on the table in about 15 minutes and just might become one of your go-to weeknight staples! It’s quick, easy, and super delicious. Of course, it’s keto-friendly and 3 main simple ingredients! If you are a garlic lover, eating a ketogenic diet, short on time, and want something tasty, look no further.

BOWL INGREDIENTS

The ingredients in this dish are bare-bones basic. No fancy items are necessary.

Here’s what you’ll need:

  • Skillet
  • Spatula

HOW TO MAKE GARLIC BEEF AND CAULIFLOWER RICE

Prep: Gather your avocado oil, minced garlic, frozen or fresh prepped cauliflower rice with excess water removed (review tips for the easiest way to do this), salt and pepper, and chopped green onions.

Preheat: Turn your burner to a medium-high and heat for about 1 minute.

Saute: Add avocado oil to the pan and saute the white portion of the green onions for about 15 seconds mixing around constantly. Then add minced garlic also constantly moving it around for 10 seconds ensuring it doesn’t burn. Add ground beef and break it up mixing it evenly with the garlic and green onions. Season and cook until all the excess liquid from the meat is gone and ground beef is cooked thoroughly.

Plate: Add steamed and rung-out cauliflower rice to a bowl and season to taste with salt. Add a portion of that flavorful ground beef.

Garnish: Top with some of the green portion of the green onion. 

Optional: Smoked paprika is optional but strongly recommended for that lovely smoky taste it adds to the meat.

TIPS FOR THE BEST CAULIFLOWER RICE BOWL

  •  Prep your cauliflower riceRing out your steamed cauliflower rice. Of course, allow it time to cool down before handling as it will be extremely hot! You can do this a couple of different ways but my favorite way is with a nylon nut milk bag turned inside out. This is so that the little bits of cauliflower rice doesn’t get stuck inside the seam. Trust me! It makes for easier clean-up! The other recommended ways are to use a clean kitchen towel or even some cheesecloth to ring out excess water. 
  • Handling freshly steamed cauliflower rice. If you are in a hurry, no problem! Spread your freshly steamed caulirice out on a baking sheet and give it about 5 minutes or so. That should help speed things along. Alternatively, you can simply run under cool water and ring it out immediately but of course, that affects the temperature.
  • Switch up the protein. Ground beef does not work well for you? Opt for other ground meat options such as ground turkey, ground chicken, or ground pork in place of the beef. If you don’t eat meat, you could go full veggie by adding vegetarian meat crumbles.

VARIATIONS

  • You could omit the cauliflower rice altogether, making the ground beef, and add a side of broccoli or any of your favorite veggies.
  • Top skillet (oven-proof) with cheese of choice and pop under the broiler for a yummy cheesy topping.
  • A drizzle of chili oil or even a sprinkle of red pepper flakes can be a really nice touch.
  • Season. Remember you can season to your preference! This recipe is a great quick and easy weeknight or anytime keto meal, but customize it to your liking! Have a seasoning blend you love, test it out and let us know how it worked out in the comments!

HOW LONG CAN I KEEP THE GARLIC BEEF AND CAULIFLOWER RICE LEFTOVERS?

  • Preferably, using an air-tight container, you can store the leftovers in the fridge for up to 2 days. When ready, reheat them in a microwave-safe container or even an air fryer using the reheat function can also be a quick and easy option.

Notes

If you have a really fatty pound of ground beef, you may not need to add the avocado oil and may even need to remove some of the excess fat.
